Recipie review: Blini

As I mentioned, I'll be trying out and reviewing some of the recipes from the different cookbooks I've found that are specifically for cancer. First up: "blini" from the Prescription to Taste cookbook, on page 40.

I'll post the actual recipe and what changes I made after the jump, but just let me say first and foremost: it's basically glorified mash potatoes. The advantage to it is that they're thinner, and therefor easier to swallow, but if that's not a problem for you, you'll probably want to make the changes I suggest. Overall, good side dish, could be a decent main dish as well, but nothing mind blowing.
Base recipe: ingredients: 5 potatoes, 3 eggs (whole, beaten), 1 cup of parmesan, 1 cup of heavy cream, salt and pepper to taste

Preheat the oven to 350*F
Boil and mash the potatoes
Stir in the rest of the ingredients
"Add heavy cream until you obtain a semisolid consistency (with the paddle allow some of the mixture to come off into the bowl, it should drop lumpy but easily)."
"Pass the mixture through a strainer and dispose of the lumps, only using the well-uniformed mixture"
Pour whole thing into a 9"x12" pan 2" deep and bake for 15 minutes

So, that's the original recipe. Some things I modified: I diced up half a capsicum/red bell pepper, 3 mushrooms, and one of my basil plants and added those in. Also, I used light cream instead of heavy, but you could use milk, or if you wanted it to be more solid you don't really need anything. I didn't bother straining it either since my throat isn't raw from treatment. That was enough to feed me and 3 women, so it should be plenty of food for 3-4, unless you had me and my brother together.

Also, if you did want to make this a proper main dish, I would recommend adding in some diced up ham or bacon.
